Mango-Lime Compote

A bright, fruity compote of simmered mango with honey and lime — perfect spooned generously over pancakes while warm.
Ingredients
- 1 mango, diced into 1cm cubes
- 1 tablespoon lime juice
- 1 tablespoon honey
- ½ teaspoon lime zest
- 1 pinch salt
Instructions
- Combine: Add the diced mango, honey, lime juice, and salt to a small saucepan over medium heat. Stir to combine.
- Simmer: Let it simmer for about 5 minutes, stirring occasionally, until the mango softens and the liquid thickens into a light syrup. Some chunks should still hold their shape.
- Finish: Remove from heat, stir in the lime zest, and taste — add a tiny bit more honey if the lime is too tart.
- Serve: Spoon generously over pancakes while warm.
Tips
- Start with half the lime juice if your lime is very tart and add more at the end.
- For a chunkier texture, add half the mango at the start and fold in the rest at the end.
- A splash of coconut cream on top takes it up a notch.
